Cooking has always been a breather for me. The kitchen is every mom's fave go-to-place whenever we feel the need to be alone. Today, I am glad to get hold a bag of Dona Elena products at home. I have a reason to play around the kitchen!
MINT PESTO PASTA WITH DOÑA ELENA ANCHOVIES & CASHEW BITS
Ingredients:
100g Dona Elena Pasta
Dona Elena Pure Olive Oil
Dona Elena Anchovies
Toasted garlic bits
Pesto Powder or Pesto Sauce
1tbsp unsalted butter (optional)
Salt & Pepper to taste
Garnish with:
Mint
Toasted garlic bits
Cashew bits
Directions:
Bring to a boil 300ml water . Cook pasta for 8-10 mins.
Set aside
Heat pan. Pour olive oil. Saute garlic bits. Add butter (optional) pour pesto powder. Stir until well blended. Add cooked pasta. Mix well.
Serves 2.
ANCHOVY GARLIC BREAD
Ingredients
Basic Bread:
1 cup whole wheat flour
1/4 cup sugar
1/8 cup warm water
1 tsp instant dry yeast
1/4 cup vegetable oil
1/8 tsp salt
Filling:
Doña Elena Anchovy
1/4 cup toasted garlic
Directions:
Sift together all dry ingredients, add warm water, oil. Knead for 10-15 mins
Let the dough rest for 1 hour
When doubled in size push down dough to release air.
Knead again for another 4 mins. Divide dough by 60g each.
Rinse anchovy with running cold water to neutralize saltness., pat dry.
Put a slice inside dough, sprinke a huge amount of toasted garlic, roll it according to your desired shape. Sprinkle with sesame seeds. Let it rest again for 30 mins or until doubled in size.
Bake in a preheated oven (280 deg) for 12-15 mins or until golden brown. Serve.
